Cultivators will purposely age their garlic because aged garlic contains stronger antioxidants¹  without the odor of fresh ones.

The antioxidants contained in garlic protects our DNA from mutations. It also plays a supporting role in protecting the brain from being impaired by the damage caused by pollutants.

Squash contains carotenes.  Carotenes is a phytochemical that gives squash its color.  This phytochemical can help protect the cells from the damage caused by harmful free radicals.

That’s because quinic acid can help to repair DNA.  It does this by increasing the body’s production nicotinamide also known as vitamin B3.¹
